Chef Dang's foray into the world of professional baking began in earnest in 1995 at the prestigious Four Seasons Resort and Club Dallas at Las Colinas. Over two decades, he had the honor of apprenticing under the legendary award-winning Executive Pastry Chef Randy Gehman. Gehman's remarkable creations, particularly his sumptuous desserts and intricate holiday chocolate displays, provided Chef Dang with a vibrant platform to sharpen his skills. Dang dedicated himself to crafting an array of baked goods and confections, enhancing the hotel's menu, and amplifying guest satisfaction for over 700 daily patrons.
Throughout his tenure at the Four Seasons, one of Chef Dang's key annual undertakings was preparing pastries and baked goods for the multi-day AT&T Byron Nelson Golf Tournament, one of the prominent PGA Tour stops in the Dallas-Fort Worth Metroplex boasting over 140,000 spectators on grounds per year. He had the privilege of designing custom dessert offerings for tournament guests, contributing to the event's high-standing reputation as a leading charity fundraiser on the PGA Tour.
In addition, Chef Dang was trusted with the task of single-handedly managing the pastry items for the Las Colinas Resort's esteemed Sunday brunch. This responsibility offered him a consistent opportunity to display his creativity and precision.
In 2016, Chef Dang brought his expertise to the Omni Las Colinas Hotel, contributing to the daily pastry and dessert production for special events. Since September 2023, he continues to apply his refined pastry skills at the Central Market in Dallas, TX, servicing Dallas culinary enthusiasts in assortment of various pastry departments.
